Easy Avocado Pasta Sauce 🥑 (1 serving)
- 1/2 avocado
- 1 tbsp nut milk (feel free to add more if you like it more runny)
- 2 tsp olive oil
- 1/2 tsp dried basil
- 1/2 tsp oregano
- 1/4 tsp garlic powder
- lots of black pepper
Mash up avocado with fork in a small dish
Add in all other ingredients and continue to mash until creamy and smooth
Add sauce to cooked pasta and serve with some greens, red chili flakes, and everything bagel seasoning | #cleaneatsbytay

Himalayan pink salt and black pepper, to taste

Place garlic, jalapeño, shallot, parsley, cilantro, oregano in food processor then process/mix until combined. Add remaining ingredients until smooth, scraping sides as needed. Thin with filtered water until semi-thick or until desired consistency. Taste and adjust flavor, as needed. Enjoy immediately or store in an airtight glass container and refrigerate up to 4-5 days 🍃

But, I did manage to wake up in time, getting to the gym and sorting lunch with this quick and simple @weikfieldind Wheat Pasta. While the #fusilli took longer to boil since it's durum wheat (higher protein), I chopped some garlic, bell peppers, tomatoes, sweet corn and #olives. Tossed the veggies into a spoon of olive oil, added @cucinaantica tomato basil sauce (the healthiest, with only 35 cal in 100g), and later, the boiled swirls. . . Then, some folding, seasoning and "cheese-ning" ;) as shown in the video. . . What? Cheese is #goodfat!🤗 . . . Here is some whole wheat fusilli in lemony, arugula, almond pesto with turkey meatballs, a simple salad and an egg (duh). Filling, nourishing and satisfies my ever present bread/pasta cravings!

Ich war mal mutig und ich habe mich an #lowcarb Basilikum- Ravioli mit einer Pilzfüllung versucht. Dazu gibt es selbstgemachtes Rucola-Kichererbsenpesto mit frischen Tomaten. 
Es ist zwar immer wieder eine riesige Schweinerei, aber der Aufwand lohnt sich wirklich, denn sie sind unfassbar gut geworden. 😍

Quis testar pela primeira vez a massa sem glúten da @reservamundi de quinoa, amaranto e beterraba e me surpreendi! Super saborosa! Encontrei no @redeangeloni .
Cozinhei a massa conforme as instruções da embalagem. Fatiei cogumelos shitake, fatiei 1 cebola roxa em meia lua, fatiei 2 dentes de alho, fatiei 1 maço de brócolis ramoso, 1 xícara de tomatinhos cereja da horta picados e pimenta dedo de moça (opcional, mas eu amo).

Em uma panela aqueci 1 colher de chá de manteiga ghee @madhughee e refoguei os cogumelos. Temperei com sal e pimenta do reino moída na hora. Reservei. Na mesma panela aqueci mais um pouco de manteiga e refoguei a cebola e o alho. Depois acrescentei os brócolis até murchar. Então acrescentei os tomatinhos, a pimenta, os cogumelos novamente e a massa no final. Se ficar meio seca, colocar um fio de azeite de oliva para que a massa não grude e fique bem soltinha. Acertar o sal e servir! 😋

Instructions:⠀
Roast cashew nuts for the topping in a pan without oil and put aside afterwards.⠀
Cook pasta according to directions stated on the package.⠀
Meanwhile cut onion, chop garlic and roast for about 2-3 minutes in a pan with oil.⠀
Add tomato puree and tomato paste; season with Italian herbs, salt, pepper and sugar to desired taste and bring to the boil.⠀
Cut small tomatoes in a half and add.⠀
Stir in cashew butter.⠀
Finally, pour off penne, combine with the sauce and serve in a pasta bowl; garnish with tomato flakes and roasted cashew nuts.⠀

Pasta con salsa de coliflor, champiñones, cebolla y pimiento rojo 100% vegana 👌👌😍😍
Salsa: -medio plato de coliflor hervida
-media cebolla.
-2 dientes de ajo pequeños/medianos.
-3 cucharadas de salsa de soja.
-3 cucharadas de levadura nutricional
-un poco de pimienta negra.
-un poco de albahaca
-5 cucharadas de aceite de oliva.
-medio vaso de agua.
-medio vaso de leche vegetal.
-un poco de curcuma.
-un poco de sal.
-una pizca de paprika.
1° se pone el aceite en una sartén con la cebolla y el ajo y se pocha un poco, cuando estén blanditos lo sacas del fuego.
2° se echan todos los ingredientes en una batidora (incluido el aceite donde pochaste la cebolla) y se bate hasta que quede homogénea. Si quieres una consistencia más líquida añade agua; si la quieres más espesa añade más coliflor.
3° para terminar añade los vegetales que quieras. Yo cociné un poco medio pimiento rojo, un cuarto de cebolla y media bandeja de champiñones y lo añadí al final.

Cauliflower Gnocchi! These were pretty fun to make, it was my first time and I think they turned out better than expected! 😎😬 They are quite time consuming but definitely worth it 😉. I just roasted half a head of cauliflower and 2 cloves of garlic on 375 for 20 mins and blended everything to get a smooth texture. On a clean surface put about half a cup of flour...(I used gluten free flour). Add about half of the cauliflower mixture and start to mix.... it’s very sticky at first so patience is key lol. Add more flour and 1 egg 🥚....keep mixing and kneading until a dough forms. Roll into sausage rolls and cut into small pieces. Boil your gnocchi for 3-5 mins or until they float to the top. Fry em up with your fave veggies, garlic and chilli flakes. Salt and pepper to taste. They are freakin delicious guys! Give them a try and let me know your thoughts 😊.

While it’s roasting throw some fresh arugula and cherry tomatoes in a brown and mix in a splash of olive oil, balsamic, and half a squeezed lemon and boil the pasta. Once everything is ready mix all the ingredients together and squeeze the other half of the lemon in along with a little more balsamic. *

This recipe can be used for dinner or for meal prepped lunches during the week.

Ingredients:
⚡️Jumbo Shells
⚡️Pasta Sauce (you can season this if you want.. I like spicy food so I added chili flakes, garlic powder, black pepper, and Italian seasoning to mine)
⚡️Mozzarella Cheese (I used 2% milk mozzarella cheese)
⚡️ 1 Pack of tofu (I used firm)
⚡️ .5 medium green bell pepper
⚡️ 1 medium red onion
⚡️ 1 jalapeño
⚡️ Spinach

Here’s the recipe in 9 easy steps!
1️⃣ Put the shells to boil in a pot of water.
2️⃣ While the shells are cooking, chop up the bell pepper, onion, & jalapeño into small squares. Chop the spinach as well.
3️⃣ Heat a frying pan, spray some pan, & sauté the vegetables.
4️⃣ Crumble the tofu & add it in with the vegetables & sauté some more.
5️⃣ Once the shells are about half cooked, drain out the water. Line a baking pan with pasta sauce. 
6️⃣ Stuff each she’ll with the sautéed mixture.
7️⃣ Sprinkle sauce on top (I put less sauce because I don’t mind my pasta dry, but you can always add more), followed by the cheese.
8️⃣ Put it in the oven at 350 & let it cook.
9️⃣Take it out of the oven, let it cool, & ENJOY!! 😋😋😋

SAVE this healthy pasta 🍝 recipe to try!! • Healthy, protein-packed stuffed shells... who would’ve thought? 🤷🏽‍♀️🤷🏽‍♀️ • This recipe can be used for dinner or for meal prepped lunches during the week. • Here it is!! • Ingredients: ⚡️Jumbo Shells ⚡️Pasta Sauce (you can season this if you want.. I like spicy food so I added chili flakes, garlic powder, black pepper, and Italian seasoning to mine) ⚡️Mozzarella Cheese (I used 2% milk mozzarella cheese) ⚡️ 1 Pack of tofu (I used firm) ⚡️ .5 medium green bell pepper ⚡️ 1 medium red onion ⚡️ 1 jalapeño ⚡️ Spinach • • Here’s the recipe in 9 easy steps! 1️⃣ Put the shells to boil in a pot of water. 2️⃣ While the shells are cooking, chop up the bell pepper, onion, & jalapeño into small squares. Chop the spinach as well. 3️⃣ Heat a frying pan, spray some pan, & sauté the vegetables. 4️⃣ Crumble the tofu & add it in with the vegetables & sauté some more. 5️⃣ Once the shells are about half cooked, drain out the water. I’m really loving the fact that I made a big dinner yesterday when I had some extra time - so we were able to have leftovers for dinner tonight! Leftovers on a Monday actually sounds like a perfect idea... just one less thing to have to worry about doing when you are just getting back into the grind of the work week. And with the extra time I had from not cooking I was able to easily get a workout in plus some extra play time with baby v before dinner! .

Try my pasta salad with creamy avocado cauliflower mayo 🥑 I used @chickapeapasta chickpea and lentil pasta but you can use any pasta of your choice 🌱 .

1 box chickpea pasta, cooked 
1/2 cucumber, sliced 
1 cup grape tomatoes 
1 can artichoke hearts, chopped 
1 handful fresh parsley, chopped .
.

Creamy Avocado Dill Mayo
.
1 avocado 
1 cup cooked cauliflower 
2/3 cup water
1 teaspoon Himalayan salt 
1 tsp Apple cider vinegar 
2-3 tsp lemon juice 
1/2 - 1 tsp dried dill

Blend all mayo ingredients in a blender until smooth.
Toss with the pasta and veggies. Keeps for 2-3 days. .

Courgette and lemon tagliatelle with pine nuts 🍝 🍋This fresh, lemony pasta tastes like summer in a bowl! The grassy flavor of courgette meets the crisp bites of toasted pine nuts, all brought together into a smooth and creamy sauce. 
Ingredients:
* 7 oz dried tagliatelle (egg-free)
* 1 tbsp olive oil
* 1 onion, finely chopped
* 1 clove garlic, crushed
* 2 medium zucchini, grated
* 1 tbsp pine nuts
* 2 lemons
* Sea salt
* Black pepper
* 2 tbsp extra virgin olive oil
* 1 handful fresh basil

Method:
1. Cook the pappardelle in a large saucepan of boiling water over a high-medium heat for 10 minutes until al dente.
2. In the meantime, heat the olive oil in a large frying pan over low-medium heat. Add the onion to the pan, followed by the garlic. Add the courgettes to the pan and increase the heat to medium. Stir frequently and cook for 4–5 minutes. Add the pine nuts and cook for a further minute.
3. When the courgettes have softened, squeeze over the juice of each lemon through a sieve, then remove the pan from the heat and season with sea salt and black pepper.
4. Toss the cooked, drained pappardelle into the courgette and coat evenly. Drizzle with extra virgin olive oil and scatter over basil leaves. Serve immediately.

Ingredients:
1 shallot, chopped
2 garlic cloves, minced
Extra-virgin olive oil, for drizzling
½ teaspoon smoked paprika 
1 tablespoon balsamic vinegar
1 cup raw cashews, soaked 3 to 4 hours, preferably overnight, and drained
3 tablespoons extra-virgin olive oil
½ cup water, more as needed
¼ cup nutritional yeast
Pinch of cayenne pepper
1 teaspoon turmeric, optional
Sea salt and freshly ground black pepper
12 ounces lentil pasta
2 cups cooked broccoli .

Instructions:
In a small skillet, heat a drizzle of olive oil over medium-low heat. Add the shallot and garlic and sauté until soft, about 3 to 5 minutes. Stir in the paprika, and balsamic vinegar and cook another 30 seconds.
In a high speed blender, puree the sautéed shallot mixture with the cashews, 3 tablespoons of olive oil, the water, nutritional yeast, cayenne and turmeric (if using). Season to taste with salt and pepper. Makes about 1 ¾ cups of sauce.
Bring a large pot of salted water to a boil. Prepare the pasta according to the instructions on the package, cooking until al dente. Reserve 1 cup of the pasta water. Drain and return the pasta to the pot. Stir in the sauce, adding the pasta water as needed to thin the sauce and make it creamy. Add the broccoli, season to taste, and serve.
