WAFFLE day! Ok I know it’s Tuesday, but I wanted waffles. Happy Spring all! There’s a now storm tomorrow so it doesn’t quite feel like it but that’s New England for ya! Happy Tuesday loves. What are you doing to celebrate spring? I’m thinking of buying some tulips for my apartment to brighten it up.
Deets: Made some of the banana waffles I made last week with @birchbenders new banana mix (recipe in last week’s post). Topped with bluebs, @georgiagrinders almond butter, @goodmixfoods and paired with some strawberries, avo, egg, @foragerproject cashew yogurt with cacao nibs, honey roasted chickpeas all over some arugula.

Yesterday was my first time going to the gym after 8 months not being able to work out! For those who don’t know, I tore my hip joint last year. For someone who worked out 4-5 day a week to doing nothing was really hard. After a few weeks of my injury, I was only able to do long walks/hikes as my exercise. But even with that, I had to be careful. I had a hard time because one of my passions was taken away from me all of a sudden. Now that I am back at the gym- it’s a big deal. I cannot do a lot of things at the moment, but I’m just excited to be back. It’s the little things, right? I’m trying to not complain about things I cannot do and instead do my best with what I am able to do! Yesterday my husband and I did yoga together. I just walked out with a thankful heart. There is always something to be grateful for. ♥️ also I don’t want to forget about the creamy dreamy GOODNESS. It’s a mint chocolate chip smoothie! .

Bringin it back to basics this #toasttuesday with a classic combo of avocado + toast with smoked paprika and salt 🌿 I recently tried organic avocado because they were actually less expensive than the regular at my local grocery store, and I swear there’s a massive difference 🥑 I’m not usually one for buying organic because it’s typically more expensive and I’m on a tight grad student budget 😅 But these have opened my eyes to a whole new world 🙌🏼 Can anyone else taste the difference or is it just me?! ❤️
Makkelijk te maken pompoensoep!
Benodigdheden: 1 flespompoen en 4 winterpenen.
Stap 1: Schil de pompoen en de winterpenen. Snijd deze in kleine stukjes en breng ze aan de kook. Laat dit koken 20 minuten.
Stap 2: Giet het geheel af en pureer het in een keukenmachine of blender of gebruik een staafmixer (wat je tot je beschikking hebt). Voeg kruiden toe die je lekker vindt.
Stap 3: Breng het aan de kook en voeg amandelmelk toe tot het geheel uitgedund is.

Almond Joy🌟Oatmeal 🥥🍫 almonds joys used to be one of my favorite candy bars!
1/2 cup rolled oats boiled in 1 cup of coconut water. Once boiling turn down to medium heat, simmer and stir adding in about 2 teaspoons cocoa powder (or cacao+sweetener). Stir for about 3-5 minutes until the oats are thick and creamy. Meanwhile take aboit 1 tablespoon of almonds chopped and broil them with coconut flakes so they are lightly toasted. Transfer the oats to a bowl and drench in almond milk or coconut milk. Top with almonds and coco flakes 😋🙌

Recipe of this amazing RISOTTO. -Cook savoy cabbage with olive oil and garlic. -When cabbage is cooked brown the rice with it and add enough water and salt.
-After 20 minutes the rice should be cooked. At this point add 40g of cheese.
On top I added chives.

RICH AND CHEWY CHOCOLATE TRUFFLE ENERGY BALLS 😏
So I told you guys I would make more and add the macros for anyone who needs to know 🌚 These are superrrrr healthy and absolutely delicious (if I may say so myself 💁🏼♀️)! The macros are quite low so you don’t have to feel guilty having these 🤓 They’re especially good if you just want a small snack before the gym or even in the morning when you’re on the go👌🏻 MACROS per serving:
This girl did good 😅 NO added sugar, NO dairy, NO gluten. Does contain nuts but other than that it is suitable for most 🤯
