Pad Thai topped with loads of avocado because it’s just necessary sometimes 🤭
Recipe 
Ingredients :
4 ounces Pad thai noodles
1 cup carrot, chopped
1/2 green onion chopped
14 to 16 ounces (400 to 450g) extra firm tofu,
1 cup bean sprouts
1/4 cup cilantro chopped
1/4 cup peanuts
1 tablespoon sesame seeds
2 tablespoon olive oil
Juice of lime
Sauce
6 pods tamarind pods, shelled
1/2 cup hot water
2 tablespoons coconut sugar or cane sugar
2 tablespoon soy sauce 1 teaspoon chili paste
Method: 
1.Place the uncooked noodles in a bowl of hot water to soak or simply follow the instructions on your package.
2.In a medium sized bowl pour 1/2 cup hot water and place shelled tamarind pods and let soak for 10 minutes, you will use the juice of this mixture later for the sauce.
2.Heat a tablespoon of oil over medium high heat. Add the carrots and tofu, stir fry for 5 minutes or until carrots are tender and tofu is crisp. Transfer to a dish and set aside.
3.In a small bowl you will whisk together sauce ingredients. Gather 5 tablespoons of tamarind juice (from the bowl of soaked tamarind pods and water, avoid any tamarind pieces and focus on only getting the liquid), coconut sugar, soy sauce, chili paste and lime.
3.Add another tablespoon of oil to the pan. Drain the noodles - they should be softened by now. Add the noodles to the hot pan and stir fry for a minute, using tongs to toss. Add the sauce and stir fry for another minute or two, until the sauce is starting to thicken and stick to the noodles. (TIP: Make sure you do not over cook, this should all be a quick stir fry process otherwise noodles will become gooey and fall apparat.
4. Serve hot, and top with bean sprouts, cilantro, peanuts, sesame seeds, carrots, tofu and fresh squeeze of lime

It’s so incredibly exciting to see new vegan restaurants popping up all the time because 1. It shows that people are becoming more aware of where their food comes from and therefore creating a demand for more plant based food and 2. It makes it so easy to go out and eat DELICIOUS vegan food whilst knowing that no living beings are harmed in the process!! And one of such restaurants is @thebutcherssonnz which blew my mind in every way! The food was incredible, the cafe itself is beautiful and filled with plants and it is entirely plant based! From smoothie bowls to nachos to chicken burgers to pancakes, this place really does have it all and now I’m just dreaming (and salivating) about my next visit!

Just because a belief has been passed down through generations, does not make it right. Traditions are certainly not always a good thing. Show and educate your children on the meat, dairy and egg industries and where their food comes from. Don't force them to eat meat, don't force them to be vegan. Present the information to them and let them decide.

RAWNIVERSARY 🎉🥂🍇🍑🍌🍍🥝🥕 One year ago around this time of the year i received my copy of the 80/10/10 diet. From then on i eat a fruit based diet and the quality of my life turned undoubtedly better. I’m not saying that since then i’m fully raw vegan because i’m not. In my point of view it’s all about priorities and mine is overall health and keeping my sanity. Ideally i could accomplish this on all raw food if i’d have access to the best quality fruit all the time and could eat anything i wanted. I could prioritize staying completely raw but there are situations when i don’t think that is the best for me. Unfortunately it happens sometimes that i have zero time to buy groceries, my fruit goes bad or what i packed for the day is way less than i’d need. In these cases i can choose to not to eat at all (what i do sometimes) or eat unripe/bad quality raw food (no thanks). For these cases i keep a few emergency sweet potatoes or squashes at home to bake at work or at home while i’m getting ready (and running late obvs😄).
This mainly applies for winter, at summertime i just visit any greengrocer basically and buy what feels the best 😄
Also, i’m not giving up on my 2 tbsp of tamari per 3 trays of 🍆bacon 😊. Raw veganism is not a way of starving of punishing yourself! You can eat the best quality organic raw foods, if you are telling yourself you have no choice, have to do it and most importantly don’t enjoy it it’s not going to effect your holistic health beneficially!

Day 6 of road trip to Turkey, have stayed for 3 nights with my friend Kirsty (who I had not seen in 27 years) in Les Contaimes Montjoie France.....fabulous time in a truly beautiful & peaceful place. Currently watching an episode of #shameless on Netflix whilst enjoying a cup of #dairyfree #chailatte since the weather here in christchurch has turned cosy - absolute bliss, although it is making me crave one of these bad boys 🍰🍫 May I present my vegan raspberry, coconut and white chocolate chip muffins 💓🤤👌🏼 I do really hate not having an oven and stand mixer to my disposal here in my uni apartment... Cherry Tomato Pasta with Mustard vinegarette 🍝 •
This pasta salad could not have been easier to make! It was also one of the most tastiest meals we’ve made to date! It will fire up your tastebuds! 🔥 •
👇🏼What you’ll need
👉🏼250g @sanremopasta pulse pasta
👉🏼250g cherry tomatoes
👉🏼6 spears asparagus chopped
👉🏼200g pitted/split olives
👉🏼1 whole lemon
👉🏼3 tbsp mustard seeds
👉🏼salt and pepper
•
1️⃣Bring water to boil with a pinch of salt
2️⃣Add @sanremopasta pulse pasta & cook for 8 minutes
3️⃣When pasta is half cooked add asparagus
4️⃣In a large bowl add
Chopped tomatoes, mustard seed, olives & juice of lemon
5️⃣Add pasta to bowl, mix it all together & add salt, pepper to taste

Ahir vam tenir convidats molt especials i la @claracasioscura va preparar aquestes boniques amanides amb sobrassada, vegandelphia, hummus i una empanada de pisto per acompanyar. Jo vaig fer unes miniburgers de falafel (no tinc foto 😭) però lo més especial va venir de part de @ltc_gala i @tvkeeper , que van dur un super pastís de @labesneta ! Increïble postre maridat amb baltic porters! Gràcies per tot 😍

Kicked off this weeks training with a short run. Calves still quite tight abs sore from yesterday’s brick session but happy with how the run went. Was slow enough but always is slower when I do it first thing in the morning but main thing is fitting in your workouts at most convenient time whatever that may be #noexcuses - weights workout later for today’s 2nd Training Session

da is er wieder, der Montag. Ich starte mit einem gesundem Frühstück in den Tag. Papaya gefüllt mit Lupinenjoghurt, Erdbeeren, Walnüssen, Chiasamen und ein Löffel Schokomüsli.

Jetzt werd ich mal versuchen meinen Schreibtisch frei zu bekommen. Es liegt ne Menge Arbeit vor mir.
